What do you get when you combine all your favourite things? Something so irresistible that you can’t stop eating. Okay, maybe I’m exaggerating a bit, but there’s salted caramel & dark chocolate involved here! Alright, so now that I’ve got your attention – without any more drama – here’s how I made something that’s now become a new favourite: Vanilla cupcakes with Salted Caramel centre & Bitter Chocolate ganache.
For the cupcakes
1 1/2 cup of whole wheat flour
1/2 tsp of baking powder
1/4 tsp of baking soda
Sift these ingredients & keep them aside.
Then in a mixing bowl, add the following:
1 cup sugar
1/4 cup of olive oil
1 tbsp of yogurt
Cream these ingredients together & add 1 tsp of vanilla essence
Add the flour mix to this & mix well until there are no lumps. Pour into prepared cupcake moulds & bake for 30-40 minutes at 180 degrees.
Remove the cupcakes from the oven & let it cool down.
Meanwhile let’s make the ganache:
1/3 cup of bitter chocolate
2 tbsp of sugar
1 tsp of butter
A splash of milk
Put all of these in a pan & place over a double boiler. Gently stir it together as it melts to form a silky smooth ganache.
By now the cupcakes would have cooled down. Stuff these with the liquid salted caramel. Then frost with the ganache.
There you go! So easy!
*You can make the cupcakes of any flavour but remember that since there are two strong flavours involved – salted caramel & bitter chocolate, it is better to go in for something that is neutral
*If you don’t find these salted caramel centres you can always make some salted caramel sauce & stuff it using a piping bag
*You can make this the other way round too – stuff with dark chocolate & frost with salted caramel!
