The three-ingredient wonder!

Desserts on a weeknight are a no-no, I barely have time to put together a basic meal for us and to even think of dessert is exhausting. But there was this one Friday when I decided that we need to have something different from the usual soup and salad. We were having a baked dish for main course and I wanted something that would round off the meal perfectly.

Should I bake something? Nah, we were having a baked dish so this didn’t seem to make sense. I thought of making something chilled but I didn’t have so much time at hand. I thought and thought and then thought some more, which is when I saw these avocados that were meant to go into a Guacamole. I remembered a friend of mine, who is a vegan, telling me about how she makes mousse with avocado. I did a little memory jog for this recipe and then just relied on my instincts.

This recipe is really simple – there are just three ingredients! And that’s what makes this such a winner and so perfect when you hardly have

Chocolate-avocado mousse
50 gms of dark chocolate (I’ve used Lindt 85% dark chocolate)
2 ripe avocados
3-4 tbsp of Maple syrup

Melt the chocolate using double boiler, allow it to cool down for a while.

Cut the avocados into half, remove the stone, scoop out the flesh and mash it well so that there are no more lumps. Now mix the melted chocolate into this and begin whisking. As you do this, gradually add the Maple syrup and keep whisking. When all the ingredients have blended together to form a smooth mixture, check the sweetness. Adjust if necessary.

Let the mousse chill in the fridge for at least an hour before serving.

* When you taste the mousse as soon as you finish whisking it may be a little raw. The chilling allows the flavours to come together.

* You can use sugar if you like, but I wanted something mellow so I’ve used Maple syrup. Honey is also a good option.

* If you want, feel free to add vanilla essence or some liqueur to up the flavours a little bit.
