Berry easy and berry, berry delicious!

There are those days when you return home from work and you’re almost praying and wishing that you saved some ice cream or something sweet from the weekend in the fridge because you just need that sugar rush rush when you’re beat. Today’s one of those days. Luckily I’ve got strawberries in my fridge and I’m munching on those while I type this!

Love these even to just snack on

By now, if you’ve been here often, you would know about my infatuation with strawberries this year. This Strawberry-banana ice cream is one of the first things that I made with strawberries this season. In fact, it was one of the first sweet dishes that I made after we moved in to our new place.

The husband is addicted to bananas and I’m in love with strawberries so it was only natural that this came out, isn’t it? Actually, no, our little over-a-year old nephew was down from the capital and our cousin happened to mention that he had a sweet tooth and loved strawberries. Now, I must tell you that I absolutely love making stuff for kids for the simple reason that their feedback is so honest and the expressions on their faces when you make something they like, even a simple hot chocolate, is the best compliment. So that’s the story behind this dish, let’s move on to this simple ice cream now, shall we?

Strawberry banana ice cream

1 large banana, frozen
2 cups of strawberries, hulled and chopped
3 tbsp of hung curd
1 tsp of vanilla essence
Juice of 1/2 a lime
Sugar – if required

Cut the banana into small pieces and place this along with the strawberries, save 1/4 cup for later, curd, vanilla essence and lime juice in a mixie and blitz well until you get a smooth paste. Taste the mixture now and if you need sugar then you can add it at this point.

Pour this mixture into a plastic bowl, take the rest of the strawberries and stir them in. Place in the freezer until frozen till solid. Serve garnished with a sprig of mint or curls of dark chocolate.

Strawberry + banana = yummy!

* The banana needs to be frozen for the ice cream to get the right texture.
* It isn’t necessary to give the mixture a whiz in the blender when it is half done because there isn’t any water in the recipe but since strawberries have high water content you can do this once. But the ice cream doesn’t get too crystallised, so that works alright for me.
* Banana and strawberries are a classic combo for me, so I would serve this plain but you can top with dark chocolate or some nuts.
