Extremely easy tacos to get back after a fun weekend



Easier done than said!



Tacos with salsa and Parmesan cheese

Phew! That was one hectic weekend and it has taken me that long to recover from it, get back to routine, clear the never-ending pending emails and work and so on. It wasn’t just the weekend that was packed, but the whole of last week was nothing short of crazy – the little sister’s birthday, the earthquake, Tsunami warnings, catching a flight in the middle of the night to Bombay and it looks like the Gods above had even more adventure in store for me there – on the way to the parlour to get dressed and ready for my engagement, my friend and I were caught in this awful jam thanks to some procession and we made it in just the nick of time! Wait, I didn’t tell you I was getting engaged? *Big grin* Now you’ve figured it out! Thankfully, the fiance and I managed to steal some ‘us-time’ in the midst of all the chaos as we celebrated over some (no, a lot) of beer and grub at Cafe Mondegar, one of our favourite-est haunts. 

So that was that. And then it was back to reality with a big, big thud! 

As I was driving back home last evening, I was wondering what to blog about. I know I didn’t want write about something elaborate, it would just take too much of my time and I have way too, too much to do now. I reached home hungry and when I opened the fridge for the bottle of mustard to finish my sandwich, I saw a bowl of salsa. This dish of tacos are so easy to put together, even if you don’t have salsa ready at hand. It takes just all of 10 minutes and its a winner every time and a huge blessing  when you have sudden guests, especially the uninvited kinds. *wicked grin*

For the salsa
2 large tomatoes, chopped
1 large onion, chopped
1 tbsp of jalapenos, chopped (lesser if you want to go easy on the spice)
1tbsp of coriander leaves, chopped
1 cove of garlic, minced
Juice of one lemon
Salt to taste

Mix all the ingredients together, adjust the seasoning and proceed. 

To assemble the dish
2 packets of ready-to-eat taco shells, yes I cheated! 
Some Parmesan cheese

Spoon the salsa into the hollow of the taco shells, sprinkle some Parmesan cheese on top and microwave it for a minute or just until the cheese melts. Serve immediately. 


* You can use nachos instead of tacos too.
* If you’ve run out of either, then using Monaco biscuits as a base is a great idea. These delicious canapes are good to look at and taste too!
* Leftover salsa is never an issue – sandwich it, use it as a spread for wraps, dip for chips… the possibilities are galore!
