Fresh veggie salad with onion-garlic-balsamic dressing

Colourful and delicious

I’ve mentioned before that salads are one of those things that I’ll never say no to, in fact, that’s what I run to first when we’re at a buffet. Every once in a while I like to take a nice, fresh veggies salad for lunch to work, this isn’t for any health/diet reasons but just that it breaks the whole roti-rice-subji-bread-idli-dosa monotony. You get the drift?

This salad looks colourful and busy but it is terribly simple to put together and is great for a mid-week lunch. You can also carry some bread along if you’re looking for something substantial.
1 carrot, peeled and sliced
1 small cucumber, peeled and sliced
1 each of yellow and red capsicum, diced
A handful of black olives, sliced
For the dressing
1 1/2 tbsp of olive oil
1 tsp of balsamic vinegar
2 garlic cloves, peeled and minced
1/2 an onion, finely chopped
1 tsp of dried herbs
Salt to taste
Put all the ingredients together for the dressing and mix well. Keep this in the fridge for about 30 minutes. 
Place all the vegetables in a bowl and pour the dressing over this, toss well so that the dressing coats all the vegetables. Chill the salad for about 15 minutes before serving.

* Add a garlic bread and a simple dessert – even flavoured yogurt will do – for a complete meal.
* Leftover salad makes for a tasty sandwich filling or even a stuffing for wraps.
* You can also add other vegetables, like tomatoes, or even some shredded chicken or roughly chopped sausages to this salad.

    I like to eat cold pasta, try adding boiled whole grain pasta for a nice and filling lunch.

    I love pasta salads too.. make them quite often!
