Whole wheat banana cake
Banana cake (the recipe is here http://renuka-pinchofsalt.blogspot.com/2010/12/go-bananas.html ) is one of my favourite things to bake, just for the simple reason that it comes out fabulously well every single time. Since I’ve made this cake often enough, I decided that it was time to shake things up a little bit. And here’s what I did – I used only whole wheat flour for this, added extra bananas and reduced the sugar to about 2 tbsp and added some honey instead and apart from just walnuts, I threw in some raisins as well to balance the sweetness. 
I used a bundt cake pan for this, but any kind will work

2 cups of whole wheat flour

1 1/2 tsp of baking soda
1/4 tsp of salt
1/4 cup of vegetable oil
3-4 yellow bananas, mashed
2 tbsp of sugar
1/4 cup of honey
1 tsp of cinnamon powder
1/2 tsp of vanilla essence
3/4 cup of milk
1 tbsp of walnuts, crushed
1 tbsp of raisins
Sift the flour, baking soda and salt together. Keep this aside. 
Mash the bananas in a bowl, add the sugar, honey and cinnamon powder and mix well. Now, add the oil and vanilla essence, stir well. Fold in the flour and gradually add the milk to get the batter to a smooth consistency, you might find that the batter is a little dry but that’s alright because this is usually the case when we use whole wheat flour, just add milk to adjust the consistency but make sure that the batter isn’t too runny. Add the nuts and raisins and mix well. 
Pour the batter into a greased baking tray and back for 30-40 mins at 180 degrees celsius. Remove from the oven and allow it to cool on a wire rack. Serve warm.
