Low fat, highly delicious salad 2


Pasta salad with creamy salmon dressing

Absolutely yummy

I didn’t want daal-rice or even roti for lunch on a lazy Saturday evening and nor did I want something heavy because I’d to go for a massage in a while. It took me just five minutes to put this salad together for lunch, the measurement are all by andaaz (approximate) because I just used a little bit of this and a little bit of that! Even for the dressing I didn’t bother mixing it separately in another bowl, just tossed it all together and relished a cold salad on a sultry afternoon.
1 cup of pasta, boil (I used the shell one)
1/2 cup of cucumber, peeled and chopped
1 small carrot, peeled and chopped
You can also use other veggies like capsicum, spring onion or sweet corn
For the dressing
1 tbsp tinned salmon in olive oil, it’s one of those sandwich spread-like things that I got from the supermarket
3 tbsp of thick curds, I always use the homemade one, just make sure it isn’t too sour
1/2 tsp of Tabasco sauce
Dried herbs
Salt to taste
Mix all the ingredients together for the dressing.
Put the pasta and the vegetables in a bowl, add the dressing to this and mix well. Garnish with a sprinkle of dried herbs. Chill for 10 minutes and enjoy!

I’ve known Deepika for years now and I love the zest she shares for life. The minute I saw an announcement about healthy living and eating on her blog, I was intrigued because this is something I’m also working towards. So, taking up her suggestion, I decided to list this salad as one of the entries. Hopefully, there will be more in the offing 🙂
