Yes, I have a thing for salads and no, I’m not ashamed to admit it. I could eat a whole bowl of salad for a meal and be just as happy as I am when I’ve polished off a gourmet four course meal!
Greek salad is one of those favourites that never go out of style for me and the minute I lay my hands on some good Feta cheese, this is what I often rustle up. There’s so much in this salad that you don’t need to add much to it to make a complete meal – some warm garlic bread and a sorbet will do just fine.
And as for the salad, this is what you will need:
100gms of cherry tomatoes, sliced into half
1 medium cucumber, peeled, deseeded and diced
2 bell peppers, use different colours – deseed them and dice them
1 clove garlic, minced
7-8 black olives, sliced into half
1/2 cup of Feta cheese, crumbled
For the dressing:
2 tbsp balsamic vinegar
3tbsp extra virgin olive oil
Salt to taste
Place all the vegetables in a bowl, mix the ingredients for the dressing together and toss it in with the vegetables. Arrange lettuce leaves on a plate and put the salad on this, add the crumbled Feta cheese on top. Garnish with some more olives and serve chilled with warm bread.
