Insalata Caprese
This is such a simple salad that it’s hard to believe that such humble ingredients blend so well to create an explosion of flavours and textures that send your tastebuds into a tizzy. For me, it was love at first bite with Insalata Caprese and the one thing that I like best about this is that it’s so fuss-free, takes hardly five minutes from start to finish. 
What you need:
200gms of Buffalo Mozzarella cheese, cut into slices (You get several imported varieties in the supermarkets, but try the local ones especially the ones manufactured in Kodai which are good too and much easier on the pocket!)
1 large tomato, cut into slices
Fresh basil leaves
Olive oil
1/2 tsp of balsamic
Salt to taste
And a pinch of oregano
Take a clean plate and place the slices of cheese and tomato alternatively, stick in the basil leaves at the sides. Now, drizzle the balsamic, season with salt pepper and oregano. Finish off with a generous pour of extra virgin olive oil on the salad, chill for a while and serve with warm bread and a pasta. 
And yes, it is actually that easy!
