Wholewheat vanilla and chocolate cookies

I was at the supermarket picking up some groceries and stuff when I saw these oh-soo-cute cookie cutter, I picked them up and nearly put them back on the shelf but what stopped me was that little voice in my head that said, “Go on, make those cookies!” And I’m glad I listened to that little voice…
These cookies are easy peasy to make and you can dress them up by using nuts, chocolate chips or even drizzle melted chocolate on them, but they’re good plain as well.
What you’ll need:
2 cups wholewheat flour
1/2 tsp baking powder
3/4 cup butter
1 cup sugar
1 tsp vanilla essence
For chocolate cookies, add 1/8 cup of cocoa mixed with 1/4 cup of milk or 1/4 cup of dark chocolate, melted to the batter
Sift the wholewheat flour, baking soda and a pinch of salt. Cream the butter and sugar until fluffy and add the vanilla essence, egg and beat well to form a smooth paste.Add the chocolate at this point. Now add the flour to this and mix well, knead to form a dough. Shape this into a log, wrap with cling film and place in the fridge and allow it to rest for an hour or two.
Later, remove the dough from the fridge. Dust a flat surface with flour and roll out the dough till it is half an inch thick, use a cookie cutter to cut the shapes you like. Place on a greased baking tray and bake for 10-12 minutes until done. Cool on a wire rack and enjoy with a cup of tea.
