Chocolate cherry cupcakes with dark chocolate frosting
I was baking a chocolate fudge cake for some kids and I realised that by the end of it I still had quite some amount of batter left, it wasn’t enough to make another cake so I just added a little bit of this and that to turn it into a cupcake batter. The result? Yummy, chocolatey, melt-in-the-mouth cupcakes with a cherry centre that added a wonderful surprise element.
What I used:
1 1/2 cups of maida
1 tsp of baking powder
3/4 tsp of baking soda
1/2 cup of butter, melted and cooled to room temperature
1/4 cup of milk
3/4 cup of demarara sugar
1 tsp vanilla essence
60 gms of dark chocolate, chopped into pieces and melted into a smooth paste
Couple of canned cherries, deseeded
Sift the maida with the baking powder and baking soda. Keep this aside.
Mix the butter and sugar together until the sugar begins to dissolve, add the eggs one by one and beat it well. To this add the melted chocolate and vanilla essence and beat some more to form a free-flowing paste. Fold in the flour mixture, stir continuously to avoid lumps. Beat this with an electric beater for a minute or two, use the milk to achieve a smooth consistency.
Grease a muffin tray and spoon in the batter to three-quarters of the cavity. Press in the cherries in the centre and bake for 15 minutes at 180 degrees C.

Top with any frosting you like, I used my favourite dark chocolate. If you want something a little rich, then spread buttercream on this and garnish with chocolate vermicilli.
