Fresh fruit cheesecake

The thing that I love about this cheesecake is that it’s so, so easy to make and you can do it with just minimal ingredients in your kitchen. 
When my mom told me one Saturday night that there was too much yogurt in the those, my head was brimming with possibilities – a fruit parfait, lemon curd, shrikhand, some Tzatziki and so on… But then I spied on some fruits at home. Lightbulb moment. And I decided to put together this easy, peasy cheesecake!
You will need
2 cups of hung curd
1/2 cup or less of sugar
2 1/2 tsp of gelatine
1/4 cup of warm water
1 packet of digestive biscuits
Melted butter
Mixed fruits – sliced, chopped or anything else that you fancy
Blitz the biscuits in a mixie until they form a coarse, sand-like powder. Now put this in a dish and pour melted butter on this evenly to press it down. Chill in the fridge for about 20 mins.
Meanwhile, mix the gelatine with the warm water until it has dissolved. Mix the hung curd with a little bit of milk, dissolve the sugar into this, add the gelatine and grate some nutmeg. Now pour this on top of the biscuit base, arrange the fruits on top of this in a pattern that you like and chill for about four hours or even even over night. Eat, enjoy and savour the compliments!
