Wholewheat cinnamon-raisin muffins
For ages I’ve been wanting to try my hand at muffins because I simply love the idea that they’re so yummy and convenient! The search for the perfect muffin tray ended at that fab sale at Popat Jamal’s (one of the oldest stores in the city) and even though I was on my feet all morning, I simply HAD to try my hand at making muffins! After looking through my collection of recipe books and not finding anything I liked, I decided to just go ahead and do my own thing… 
This recipe makes 8 muffins
1 3/4 cups of wholewheat flour
2 tsp of soda bi-carb
1 tsp of cinnamon powder
3/4 cup of sugar
3/4 cup vegetable oil
1/2 cup of curds
1/2 tsp vanilla essence
1/4 cup of raisins
Some Sunflower seeds to garnish
Sieve the flour, soda and cinnamon powder together. 
Mix the sugar, oil, curds and vanilla essence together to make a smooth paste. Now add the flour to this along with some raisins and mix well to remove any lumps.
Grease a muffin tray, you can line it with paper if you like, and drop spoonfuls of the batter into the cavities. Garnish with raisins and Sunflower seeds. Bake at 180 deg for 25 mins, cool and serve!
