Cinnamon cake with orange-yogurt glaze
Ever since I’ve been egged on by friends to start taking my passion for baking seriously, I’ve had the nerve to go beyond the usual chocolate cake to unexplored territory, especially those involving icing and glazes. This is inspired by a recipe that I read from one of my favourite food blogs -pioneerwoman.com. Instead of making the plain yogurt cake as suggested, I added a spoonful of ground cinnamon. The result? A light, fluffy cake with this earthy and almost divine aroma that enveloped the entire house.
For the cake
11/2 cups of maida
2 tsp baking soda
1/2 tsp salt
1/2 tsp of ground cinnamon
3 eggs
1 cup curd
1 tsp vanilla essence
1 cup sugar
1/2 cup vegetable oil
Sift the maida, soda, salt and cinnamon, keep this aside. 
In a big bowl, beat the eggs, sugar, curd, oil and vanilla essence together. Now add the flour mixture to this and fold it well, don’t beat too much otherwise the cake won’t become fluffy. Pour the batter into a greased pan and bake for 30 mins at 180 deg. or until it’s done to a golden brown.

Now, while the cake is cooling… This is what needs to be done:
For the glaze:
1/2 cup orange marmalade
1/4 cup yogurt
Put the marmalade in a saucepan and melt it over a low flame till it becomes a sauce-like consistency. Remove it from the heat, slowly stir in the yogurt until it blends in well… Now pour this on the cake while it is cooling. Don’t worry if it dribbles on the sides, it only adds to the yummy-ness! 
Cool. Cut. Enjoy. Lick your fingers, yes just do it!
