Hmmm.. this was one of those days which was gloomy, pouring nonstop and I was at home stuck with a bad stomach. Watching back-to-back food shows on the TV didn’t actually help – I was craving for something hot, sweet and chocolatey. I didn’t have energy to bake a cake, so this is what I did with the stuff I had at home.
Chocolate multi-grain bread pudding
5-6 slices of multi-grain bread (you can use white or any other bread, except herbed of course)
2 cups skim milk
3-4 tbsp cocoa powder (depends on how chocolatey you want it to be)
1/2 cup sugar
A handful of raisins
* you can use a can of condensed milk if you like, in that case skip the milk, sugar and raisins.. use some other nuts instead
Heat the milk on a low flame and add the cocoa powder to this. Stir continuously to avoid lumps and make a smooth paste, when it starts to simmer turn off the flame and keep this aside. Meanwhile, beat the eggs and sugar together. Now, to this add the milk-cocoa mixture, be super careful while doing this because if the milk is too hot you might just end up with scrambled eggs! Add the vanilla and raisins to this and give it a quick stir.
Line a baking tray with the bread slices and pour this mixture over it. Allow this to rest in the fridge for two hours. Bake in a pre-heated oven at 180 deg Celsius for 20 minutes. Yummmy!
