I love garlic. And, that’s a huge understatement for someone who thinks baked whole garlic is the best part of a meal!
Anyway, so I had some chicken with me and I thought of whipping up my own version of a garlic kabab, which is light years away from the delicate ones that you usually find – this one’s robust, bursting with flavour and yes, very, very garlicky. Don’t say I didn’t warn you!
Garlic Chicken Kabab
500 gms of chicken, cleaned and cut into small pieces
2 tbsp curds
2 tbsp ginger-garlic paste
Juice of one lime
3 tbsp of dry garlic chutney ( I have one that my aunt makes using dry coconut, adds a zing to the dish. You can use the store-bought one too)
1/2 tsp red chilli powder
A pinch of tumeric
Salt to taste
Make a marinade using all these ingredients and coat the chicken with it. Let it marinate for atleast an hour. Spray some olive oil on the chicken, grill for 20 minutes. Serve hot with a curd dip, onion slices and lemon wedges. Heaven!
