Countdown to Christmas

So, it has been about three weeks since I soaked the dry fruits in alcohol and after that looooong, patient wait I decided to attempt baking my first Christmas cake ever. As I put the oven for pre-heating I realised it was acting funny, I didn’t want all the batter to go waste so I decided to try my hand at microwaving the cake, I don’t have a fancy convection microwave so I was hesitant. But this cake turned out so well I’m as pleased as punch, literally!

Golden fruit cake

2 cups flour (I used 1 cup maida + 1 cup atta)
11/2 tsp soda bicarb
11/2 cups sugar
1/2 cup butter (I used Amul Lite)
2 eggs
2 tsp vanilla essence
1/2 cup orange juice
2 cups of dry fruits that have been soaked in liquor for atleast a week

Sift the flour and soda together, keep this aside for a while. Meanwhile, cream the butter and sugar together, add the eggs, orange juice and vanilla essence, keep stirring until you get a light fluffy consistency. Now slowly add the flour and mix well. Coat the dry fruits with some flour and fold them in at the end, don’t beat after this just gently fold them into the batter. Pour the batter into a greased microwave dish at micro on high for 6-7 minutes. Allow the cake to rest in the microwave for some time, after that set it on a wire rack to cool. Cut into slices, store in an airtight jar. Yummmy!

If you’re using a regular oven/OTG bake for 30 minutes at 180, or until done..
