I was watching the show Ultimate Cake Off and I was itching to bake something the entire day. As a rule, I don’t use eggs in my baking (I’ve got an allergy & so does mom) but then I thought I’d brave the eggy smell just this once and try something. After seeing those oats ads on TV everyday, I really wanted to make something that wouldn’t make any of us go ‘eeeeewwwww’ at the sight of it! After pondering over several cake recipes, I whipped up my own… with fabulous results!

Oatmeal raisin cake


1 cup oats (I used Quaker)
1 cup water – boiling
1 cup maida
1/2 cup whole wheat flour
a handful of raisins
a pinch of salt
1 tsp cinnamon powder – make freshly roasted if u have the time
1 tsp baking soda
2 eggs – use one and add 1/2tp baking powder if u like
1 cup sugar
1/2 cup vegetable oil
1/4 cup honey
1tsp vanilla essence

Mix the oats in boiling water and keep it aside until it becomes mash-like.
Sieve the flours, baking soda and salt. Keep it aside
Combine the sugar and the oil, mix well. Now add the eggs, cinnamon, vanilla and mix again. Add the flour mixture and beat it until it is smooth, without any lumps. Now add the honey and the raisins. Pour the batter into a greased baking tin. Bake in a pre-heated oven for 20-25mins at 180 deg. Enjoy šŸ™‚
